Dushan Zaric has been in the restaurant and bar industry for 20 years. He has worked with Keith McNally at Pravda, Pastis and Schiller’s Liquor Bar. He has also worked with Anthony Bourdain at Les Halles, and at Amy Sacco’s Lot 61. In 2004, Dushan opened Employees Only in the Village. At the 2011 Tales of the Cocktail Spirited Awards, the bar won the titles of world’s best cocktail bar and world’s best drinks selection. Dushan, along with the team behind Employees Only, opened Macao Trading Co. in Tribeca in late 2008.

In November 2006, Dushan co-authored his first book, You Didn’t Hear It From Us: Two Bartenders Serve Women the Truth about Men, Making an Impression and Getting What You Want. In 2010 he published his second book, Speakeasy: The Employees Only Guide to Classic Cocktails Reimagined.

Recognized for his flair behind the bar, Dushan was hand-picked to be Yugoslavia’s entry at the 2002 Best Bartender in the World competition in Barcelona, Spain. To the pride of his homeland, he delivered a double win: second place in general rating and winner of the product knowledge category.
